Adventures in Food

This week’s adventures in cooking.  In the pre-baby days cooking and baking used to relax me.  I would pour myself a glass of wine and take my time enjoying the pleasure of a new recipe.  I used to bake my own bread, try difficult new recipes every other day and the pie- oh the pie!  In these post-baby days all the above has become a circus show of stress and anxiety.  Abby, owner of a once adventurous palate, has grown into a toddler with a mind of her own.  Anybody else have to try two, sometimes three different options just to get them to eat dinner?  And then I have to make something for my husband and I.  Blarg.  So now I am all about an easy meal that will stretch to cover at least two nights of dinner/lunch.  This week I am featuring some great websites and recipes that worked for me and some that I can’t wait to try.

Breakfast

Zucchini and Carrot Bread from Coconut and Lime.  Lots of veggies and Abby ate it like cake!  And like the website recommends, it is great with cream cheese.

Lunch

Barbeque Chicken Sandwiches?  Yes please!  I haven’t tried this one out yet, but I am going to this week for sure.  Here is an easy recipe using rotisserie chicken from Baked Bree.  5 of Bree’s easy weeknight recipes were featured at The Creative Mama blog.  I can’t wait to try them all.

Dinner

Slow Cooker Taco Soup Chili, another winner from Crockpot365.   I love chili because I can make a lot of it and can assemble it in 15 minutes and let it simmer all day in my Crock Pot.  I tried this recipe last week and it was a hit with the whole family- even Abby.  I tweaked it to fit our family’s tastes (I substituted pinto beans for kidney beans, etc.) but the flavor from the taco seasoning and the ranch seasoning really added an extra kick and I’m glad I tried it out.  Here is a different variation from Smashed Peas and Carrots that also looks great.

I am also all about making cooking easier and here are some helpful printable conversion charts to tape inside a cookbook or hang on your fridge.  Sigh, Martha thinks of everything!


I’m trying to rediscover the kitchen goddess that used to reside inside my body and reclaim the joy it used to bring me.  We could always use a little more joy in our life right?
